The Grape: Riesling

The Appellation: Yakima Valley, WA

The Wine: Due to its relatively high acidity, the wine does not taste cloyingly sweet or have a syrupy mouthfeel. Frost Bitten Ice Riesling shows flavors of ripe pineapple, honeysuckle and peach aromas lead to honeyed, sweet stone and tropical fruit. This sweetness is balanced nicely with a crisp acidity at the finish.

The Winemaking: Frost Bitten Ice Riesling was vinted from Yakima Valley Riesling grapes which have been frozen post-harvest.  The result is a concentrated press juice with 37° Brix.  Once fermented, the finished wine is a delicious sweet dessert wine with 18.2% residual sugar similar in style to that of a true Icewine but at a fraction of the price.
