The Grape: Vital, Fernão Pires, and Arinto

Temperature-controlled fermentation (at 26 °C; 79 °F) lasts for around 20 days, with pumping over in an open vat during the initial phase; the malolactic fermentation takes place immediately after the alcoholic one. This is followed by a long period of maturation (around 2 years) in new French oak barrels.

The Wine: On the palate the wine displays relatively dry and harmonious notes, while also being slightly tannic, with a flavour that becomes increasingly velvety over time.

Pairing Ideas: Ideal with red and white meat, as well as pairing well with poultry, hare and various cheeses.

The Winery: Since 1928, Companhia Agrícola do Sanguinhal has been engaged in the viticulture of three estates in the Demarcated Region of Óbidos that make up 100 ha of vineyards: Quinta do Sanguinhal, Quinta das Cerejeiras and Quinta de S. Francisco.
