The Grape: Pelaverga Piccolo
The Appellation: Verduno Pelaverga DOCG, Piedmont, Italy Vineyards are located inside the municipality of Roddi.
The Wine: Pelaverga Piccolo of Verduno is a native grape variety of ancient cultivation. Considered to be one of the smallest DOCs in Italy with notes of spicy and fruits.
The Winemaking: The grapes are harvested by hand when fully ripe, during the first weeks of September. The grapes are soft pressed, destemmed and placed in temperature controlled stainless steel tanks to ferment for a period of 16 days at an average temperature of 25-27° C. Once the fermentation is completed the must-wine is gently pressed with air pressers to obtain the first press. Then the wine is divided from the skins that are soft pressed with air pressers so to obtain the first press.
Maturation is in stainless steel tanks for about 6 months before release. Wine is bottled in March.
